Fondo Montebello Balsamic Vinegar of Modena are genuine Balsamics crafted according to the old recipes. Founded in 1991 by Massimo Bellodi, whose family has been handing down the traditional recipe of Balsamic Vinegar of Modena for many generations.

They strive to be regarded not only as a manufacturer of a niche products, but as a company capable of providing a wider selection of items, ranging from Balsamic Vinegar to salad dressings, vinegar mustards and natural glazes with different and captivating flavours.

The Balsamic Vinegar of Modena PGI can be produced only in the provinces of Modena and Reggio Emilia, obtained exclusively from the grape varieties of Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta and and Fortana Montuni.

Fondo Montebello Balsamic Vinegar of Modena I.G.P. (Protected Geographical Indication) is a product without any addition of aromatic substances, coloring or other additives; the specific intense taste is given by the excellent locally sourced ingredients and from the aging in wooden barrels that naturally transmit their own characteristics to the vinegar.

It is the result of unique lands and a hundreds of years of wisdom, is a clear and brilliant brown, intense, almost black color. It has a sweet-sour taste with a harmony between acidity and sweetness and with slightly acidic and delicate aroma and with woody notes. The secret of Modena Balsamic Vinegar secret is comprised of three factors: the Grapes, the Ground and Climate (or environment). Balsamic Vinegar of Modena PGI may only be produced in the provinces of Modena and Reggio Emilia, obtained exclusively from Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, and Fortana Montuni.

It is made from cooked or concentrated must with the addition of a part of aged wine vinegar for at least 10 years. It has an aging in cask from a minimum of 60 days up to more than 3 years for the product to be called ‘aged’ on the label. The fermentation takes place immediately in large vats, and then it is moved into barrels constructed from precious woods such as oak, chestnut, mulberry and juniper.

When aged to perfection the final product is filtered and subjected to a “final exam” (analytical and organoleptic). Only after meeting the standard requirements can it be certified as an authentic balsamic vinegar of Modena. +

Modena Balsamic are natural products without added colors, preservatives and thickeners. For this reason we want to underline that any slight sediment that can be found in the bottom of the bottle indicates the genuineness of our products.

MARANELLO’S CASTLE LINE The Historical Castle of Maranello built XII century. Located in a strategic position as a guard for accessing Frignano. The castle, which still exists, was built around the year one thousand by a noble family of Marano; the Arardini or Heralds. It was suspected that “Matilda” was the source for construction. The story is grounded in some fact tbecause Matilda of Canossa was the lady of Modena during the Holy Roman Empire. She was responcable for and built many churches and castles in the Apennines of Modena and Reggio Emilia.

This has been a unique product of the Emilian region for more than one thousand years. It is a harmony of balanced sweetness and acidity, very smooth, delicate and persistent with tannin-woody notes of intense dark brown color tending towards black.
