Made from only the Cerasuola Olive- It is Extra Virgin, First Cold Press; No Other Olives, No Other Blend of Grade or Region: It is a wonderful “all around” extra virgin olive oil. Smooth at first and finishes with a pepper-like finish in the back of the throat. Low Acid and High in Polyphenols: Strong aroma of green tomato and fresh grass. The “pepper-sensation” can be felt in both E.V.O.O’s depending on your pallet – for most, it is the Cerasuola that it has that quality. It is naturally occurring in an authentic extra virgin olive oil. What you are feeling by this is the polyphenols that come through – they hold antioxidant properties.
Produced from olives harvested in the company, give an oil monocultivar at 100%. Harvested directly from the plant and processed within 12 hours in the mill, retains its flavor mellow, bitter and spicy.
